Brussels Sprouts and Kale Dish

Processed with VSCOcam with f2 presetBrussels sprouts have somehow acquired a bad rep over the years, but to me, they’re super tasty and satisfying. I always look forward to having a meal with Brussels sprouts in it. Call me weird, but I’m the one getting all the fibre!

Speaking of fibre, Brussels sprouts are also insanely healthy. They’re full of vitamins C, K, B1 and B6, and they’re a great source of fibre. They’re also rich in potassium, phosphorous, folate, manganese and omega-3 fatty acids. The list of health benefits just goes on and on!

As for kale, I think we can all agree that it’s also an uber-healthy superfood, full of vitamins and wholesome goodness. After all, it’s one of the leafiest and darkest green veggies out there, which is usually a signifier of lots of great health benefits. How can you go wrong?

So what do you get when you combine these two gorgeous greens with a few mouth-watering bacon bits and some tasty seasonings? A super yummy and filling dish, perfect for this chilly spring weather!

This recipe is kind of a variation of this recipe from I tweaked it a little bit but it’s pretty similar!

To make this dish, you’ll need:

Brussels Sprouts
Chicken Stock
Olive Oil
Salt and Pepper

How much you use of each ingredient really depends on how much you want to make/how many people you’re serving, so just eyeball it. To me, this dish is a lot like a salad – really all you’re doing is throwing some ingredients in a pan and improvising (perfect for a non-chef like me!).

First, cut each sprout in half and cook your bacon on medium heat until it’s golden brown and crispy, breaking it up as it cooks. Then, heat one teaspoon of butter and olive oil in a large skillet over medium heat. Put your garlic in the skillet and cook it until it’s golden brown, then mix in your Brussels sprouts and kale and toss them in the garlic.

Add salt, pepper and chicken broth and sautée it until the greens are tender. Finally, add in your bacon and enjoy! (I also added a few chilli flakes because I’m a spice addict! It did the trick).
