The perfect light, fresh summer meal for pool lounging

The first weekend of July has brought the loveliest weather with it, and I’m so happy it’s finally starting to feel like summer. All of this sun, water and fresh air has made me work up quite an appetite for a light, colourful meal (including drinks of course!).

When it comes to cooking, I’m all about low-maintenance, easier-than-pie recipes. In fact, I’m not even sure if recipes is the best term to describe them — I just like to throw things into a bowl, improvise and see what happens! It usually makes for a fun, exciting and often educational cooking experience.

Today, I decided to whip up something super easy, nutritious and summer-approved, and I thought I’d share it with you, my lovely readers! I was totally craving something sweet, cool and fresh, so I headed to the grocery store and picked up these ingredients:

Almond slices/slivers
Goji berries for some superfood goodness
Olive oil (I mixed together honey, lemon juice, olive oil and sea salt for a sweet, natural dressing!).
Grapefruit-flavoured Perrier
White wine
Edible flowers for a pinch of pretty

When I got home, I took out a big, stylish bowl and tossed everything together. It was so easy I almost felt guilty! You guys didn’t think I would bore you with a step-by-step, super complicated recipe, did you?

As for the sangria (I guess it’s more of a spritzer, really!) I just eye-balled the wine and Perrier and threw in some fruit as well as tons of ice. The end product was a sweet, refreshing, cool bevvy that was perfect for pool lounging!
